Oreo Sparkler Cupcakes

If you have been following us over the last few days, you will see we have a minor obsession with anything red, white and blue.  Combine that with our love of cupcakes and that brings us to these Oreo Cupcakes decorated with what we like to call 4th of July Sparklers.  Before you go and get intimidated, let me just explain that these are very simple.  They are my vanilla cupcakes dolled up with Oreos.  

To simplify the recipe, we have provided you with the complete tutorial including little videos called GIFs to animate the processes.  

Place an oreo in bottom of each cupcake liner.

Fill the cupcake liners 2/3 way with batter.

Professional cupcakes are “flatter” on the top because the liners are only filled 1/2 – 2/3 way full. Do not overfill a cupcake liner with batter.

For the cupcakes
  1. 24 Oreo Cookies
  2. 1 1/2 sticks unsalted butter
  3. 1 1/2 cups sugar
  4. 2 eggs, room temperature
  5. 2 teaspoons pure vanilla extract
  6. 2 1/2 teaspoons baking powder
  7. 1/4 teaspoon salt
  8. 2 1/2 cups flour
  9. 1 1/4 cups milk
For the frosting
  1. 1 box confectioners sugar
  2. 1 stick unsalted butter
  3. 1 teaspoon pure vanilla extract
  4. 1/4 cup + 2 TBSP milk or light cream
  5. 10 Oreo cookies
For the cupcakes
  1. Preheat oven to 350 degrees. Place an Oreo cookie in the botton of each cupcake liner. Beat butter at medium speed with mixer until somewhat smooth. Pour in sugar and beat well. Add 2 eggs. Mix well. Add: vanilla, baking powder, salt, flour and milk. Beat until well incorporated and fluffy. Pour into individual baking cups, approximately 2/3 full. Bake for 18-20 minutes or until golden brown. Immediately remove cupcakes and let cool on wire rack.
For the frosting
  1. Add the Oreo cookies to a food processor and pulse until crumbled. In a bowl combine the butter, confectioners sugar, vanilla and milk. Beat until smooth. Add the crushed oreos and beat until just incorporated. Continually scrape the sides of the bowl until all ingredients are incorporated.
To assemble
  1. To frost cupcakes, you will need a 14 or 16 inch plastic piping bag and a large frosting tip of your choice (I used a french tip above). Once you have assembled your piping bag and tip, spoon the frosting directly into the bag. Pipe the frosting onto each cupcake as illustrated in the video above. Place a sparkler on each cupcake.
Notes
  1. Do not overcook the cupcakes as they will become dry.
  2. The frosting wil be very stiff. This is essential to pipe the frosting onto your cupcake.

To make “sparklers” for your cupcakes, you will need colorful straws, tissue paper, glue and scissors.

Cut the paper straws to the desirable length depending on where you are using them. These would look very cute in place of candles {do not light!} on a cake.

Ingredients
  1. Colorful paper straws
  2. White Tissue Paper
  3. Scissors
  4. Glue
Instructions
  1. Cut each straw to desirable length, approximately 3 -4 inches. Cut the tissue paper into 3x3 inch squares. Watch the video above to see how you twist the tissue paper to create a the "sparkler." Use a drop of glue at the end of the tissue paper sparkler and secure to the straw. Let dry before assembling.
